Cherry Almond Cake: How to Make the Perfect Moist Dessert

  • 3/4 cup granulated sugar
  • 2 large eggs

  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 cup cherries, pitted and halved
  • 1/4 cup sliced almonds
  • Powdered sugar for dusting

Instructions

  • 1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
  • 2. In a large bowl, cream butter and sugar until light and fluffy.
  • 3. Beat in eggs one at a time.
  • 4. Mix in almond and vanilla extracts.
  • 5. In a separate bowl, whisk flour, baking powder, and salt.
  • 6. Add dry ingredients to wet ingredients alternately with milk.
  • 7. Gently fold in cherries.
  • 8. Pour batter into prepared pan and smooth top.
  • 9. Sprinkle sliced almonds over batter.
  • 10. Bake for 40–45 minutes until a toothpick inserted comes out clean.
  • 11. Cool slightly and dust with powdered sugar before serving.

Notes

  • Fresh or frozen cherries both work well.
  • Toss cherries in flour to prevent sinking.
  • Cake stays moist for several days when covered.
