- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp nutmeg
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for rolling)
- 1. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
- 2. In a large bowl, cream together softened butter and brown sugar until light and fluffy.
- 3. Add egg, molasses, and vanilla extract; beat until well combined.
- 4. Gradually add dry ingredients to wet mixture and mix until a soft dough forms.
- 5. Cover and chill the dough for 30 minutes to make it easier to handle.
- 6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- 7. Roll dough into 1-inch balls and coat each in granulated sugar.
- 8. Place on baking sheet 2 inches apart and bake for 8–10 minutes, until edges are set but centers look soft.
- 9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For extra chewy cookies, slightly underbake and let them finish setting on the tray.
- Store in an airtight container for up to a week.
- You can drizzle with white chocolate or royal icing for a festive touch.
