Chewy Gingerbread Cookie

Soft, chewy, and perfectly spiced Gingerbread Cookies that capture all the cozy flavors of the holidays molasses, ginger, and cinnamon in every delicious bite.

  • 2 1/4 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  • 1. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
  • 2. In a large bowl, cream together softened butter and brown sugar until light and fluffy.
  • 3. Add egg, molasses, and vanilla extract; beat until well combined.
  • 4. Gradually add dry ingredients to wet mixture and mix until a soft dough forms.
  • 5. Cover and chill the dough for 30 minutes to make it easier to handle.
  • 6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • 7. Roll dough into 1-inch balls and coat each in granulated sugar.
  • 8. Place on baking sheet 2 inches apart and bake for 8–10 minutes, until edges are set but centers look soft.
  • 9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For extra chewy cookies, slightly underbake and let them finish setting on the tray.
  • Store in an airtight container for up to a week.
  • You can drizzle with white chocolate or royal icing for a festive touch.
