Chicken Burrito Casserole

A delightful twist on the traditional burrito, this Chicken Burrito Casserole combines layers of flavors and textures, making it a comforting and satisfying meal.

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup cooked rice
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Tortilla chips (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, black beans, corn, salsa, cooked rice, half of the cheese, taco seasoning, salt, and pepper in a large bowl.
  3. Prepare a casserole dish by lightly greasing it with cooking spray or oil.
  4. Pour the chicken mixture into the dish and spread it out evenly.
  5. Sprinkle the remaining cheese on top of the chicken mixture.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Serve with crushed tortilla chips on top for added crunch.

Notes

You can prepare the casserole ahead of time and store it in the fridge. Consider adding chopped jalapeños or hot sauce for extra spice.
