Chicken Chilaquiles Casserole

This Chicken Chilaquiles Casserole layers crispy tortilla chips, shredded chicken, salsa, and melty cheese for a comforting and easy Mexican-inspired bake!

Ingredients

  • 4 cups tortilla chips
  • 2 cups cooked shredded chicken
  • 2 cups red or green enchilada sauce
  • 1 cup salsa
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: avocado slices, jalapeños, lime wedges

Instructions

  • 1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • 2. In a large bowl, mix shredded chicken with enchilada sauce, salsa, cumin, and onion.
  • 3. Layer half of the tortilla chips in the baking dish.
  • 4. Spoon half of the chicken mixture over the chips and sprinkle with cheese.
  • 5. Repeat with remaining chips, chicken, and cheese.
  • 6. Bake for 20–25 minutes until hot and bubbly.
  • 7. Top with sour cream, cilantro, and your favorite garnishes before serving.

Notes

  • You can use rotisserie chicken for convenience.
  • Swap in green enchilada sauce for a tangier flavor.
  • For extra crunch, add a handful of chips on top after baking.
