Chicken Curry with Paratha

Delicious and satisfying Chicken Curry paired with crispy Paratha, perfect for a cozy family dinner or a gathering with friends.

  • 500 grams of chicken, cut into pieces
  • 2 medium onions, finely chopped
  • 2 tomatoes, pureed
  • 4 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 23 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust for spice preference)
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • 4 tablespoons of cooking oil
  • 1 cup of water
  • Fresh cilantro for garnish
  • 2 cups of whole wheat flour (for Paratha)
  • 1 teaspoon salt (for Paratha)
  • Water, as needed (for Paratha)
  • Ghee or oil for cooking (for Paratha)

Instructions

  1. Marinate the chicken: In a bowl, mix the chicken pieces with a pinch of salt, turmeric powder, and red chili powder. Let it marinate for at least 30 minutes.
  2. Prepare the curry base: Heat oil in a large pot over medium heat. Add the chopped onions and fry until they turn golden brown for about 10 minutes.
  3. Add garlic and ginger: Stir in the minced garlic and grated ginger. Cook for a few more minutes until the raw smell disappears.
  4. Incorporate the tomatoes: Pour in the pureed tomatoes, give it a good stir, and let it cook. Add the slit green chilies. Cook until the oil starts separating from the tomato mixture, about 5-7 minutes.
  5. Spice it up: Add coriander powder, cumin powder, and more salt if needed.
  6. Cook the chicken: Add the marinated chicken pieces and mix well. Cook for about 5 minutes.
  7. Simmer: Pour in the water and cover the pot. Let it simmer on low heat for about 20 minutes.
  8. Garnish: Check for seasoning and garnish with freshly chopped cilantro before serving.

Notes

Use fresh ingredients for best flavor. You can modify spices according to your heat preference.
