Chicken Dumpling Soup Recipe

A comforting, classic chicken dumpling soup made with tender chicken, hearty vegetables, and soft, fluffy dumplings simmered in a savory broth. Cozy, nourishing, and perfect for cold days or when you need comfort food.

  • Soup:
  • 2 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1 bay leaf
  • Dumplings:
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp butter, melted
  • 1/2 cup milk

Instructions

  • 1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery and cook 5–7 minutes until softened.
  • 2. Stir in garlic and cook 30 seconds until fragrant.
  • 3. Add chicken broth, chicken, salt, pepper, thyme, parsley, and bay leaf. Bring to a gentle boil.
  • 4. In a bowl, mix flour, baking powder, and salt. Stir in melted butter and milk until just combined.
  • 5. Reduce soup to a simmer. Drop dumpling dough by spoonfuls onto the surface of the soup.
  • 6. Cover and simmer 12–15 minutes without lifting the lid, until dumplings are puffed and cooked through.
  • 7. Remove bay leaf, taste, and adjust seasoning.
  • 8. Serve hot.

Notes

  • Do not overmix dumpling dough to keep them fluffy.
  • Use rotisserie chicken for convenience.
  • Add peas or corn for extra veggies.
