Chili’s Southwest Eggrolls Recipe

Chili’s Southwest Eggrolls copycat features crispy fried egg roll wrappers stuffed with spicy chicken, black beans, corn, spinach, peppers, and melted pepper jack cheese. Served with creamy avocado ranch dip for ultimate game day appetizer perfection.

  • Filling:
  • 1 lb cooked chicken breast (diced small)
  • ½ cup canned black beans (drained, rinsed)
  • ½ cup frozen corn (thawed)
  • ¼ cup red bell pepper (finely diced)
  • ¼ cup red onion (finely diced)
  • 2 tbsp pickled jalapeños (diced)
  • 1 cup frozen spinach (thawed, squeezed dry)
  • 1½ tsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • 1½ cups shredded pepper jack cheese
  • Assembly:
  • 1215 egg roll wrappers
  • 1 egg (beaten with 1 tbsp water)
  • Vegetable oil for frying
  • Avocado Ranch Dip:
  • ½ cup ranch dressing
  • ½ avocado
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  • 1. Combine all filling ingredients except cheese in large bowl. Mix well. Fold in shredded pepper jack cheese.
  • 2. Place egg roll wrapper diamond-shaped on clean surface. Spoon 2-3 tbsp filling near bottom corner. Fold bottom up over filling, then fold in both sides. Brush top edge with egg wash. Roll tightly upward, sealing seam.
  • 3. Heat 2-3 inches vegetable oil to 350°F in deep skillet. Fry eggrolls 2-3 minutes per side until golden brown and crispy. Drain on paper towels.
  • 4. Avocado ranch: Blend ranch dressing, avocado, and lime juice until smooth. Season with salt.
  • 5. Slice eggrolls diagonally. Serve hot with avocado ranch dip.

Notes

  • Finely dice all veggies same size as chicken for even cooking/texture.
  • Squeeze ALL water from spinach—wet filling causes eggrolls to burst.
  • Freeze assembled (uncooked) eggrolls on tray, then transfer to bags for up to 3 months. Fry from frozen.
  • Air fryer option: 375°F, 8-10 minutes, flipping halfway, spray with oil.
  • Make dip ahead; flavors improve after 1 hour chilling.
