  • 2 (8 oz) blocks cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup mini chocolate chips
  • 1/4 cup mini chocolate chips for topping

Instructions

  • 1. Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  • 2. Mix graham cracker crumbs and melted butter until combined.
  • 3. Press mixture firmly into the bottom of the prepared pan.
  • 4. Bake crust for 8 minutes, then let cool slightly.
  • 5. In a bowl, beat cream cheese and sugar until smooth.
  • 6. Add eggs one at a time, mixing just until combined.
  • 7. Mix in vanilla extract and sour cream.
  • 8. Fold in mini chocolate chips.
  • 9. Pour cheesecake mixture over crust and spread evenly.
  • 10. Sprinkle remaining mini chocolate chips on top.
  • 11. Bake for 30–35 minutes until center is set.
  • 12. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
