Chocolate Chip Cookie Butter Bars

Delightful cookie bars that combine rich chocolate chip cookie flavors with creamy cookie butter.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup creamy cookie butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • Optional: Sea salt for sprinkling on top

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving excess for easier removal.
  2. Cream the butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the cookie butter and mix until combined.
  4. Incorporate the eggs and vanilla extract, mixing until fully combined.
  5. Combine the flour, baking soda, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients.
  6. Fold in the chocolate chips.
  7. Spread the batter into the prepared baking dish, optionally sprinkling sea salt on top.
  8. Bake for 25-30 minutes until edges are golden and a toothpick comes out clean.
  9. Let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
  10. Serve and enjoy with milk or your favorite beverage!

Notes

Store in an airtight container at room temperature for 3-5 days or refrigerate for up to a week. For longer storage, freeze for up to 3 months.
