8 large day-old croissants, cut into 2-inch pieces,
1 cup dark chocolate chips,
6 large eggs, room temperature,
2 cups heavy cream,
1 cup whole milk,
¾ cup granulated sugar,
2 teaspoons vanilla extract,
½ teaspoon salt,
¼ teaspoon cinnamon,
2 tablespoons butter for greasing
Instructions
Butter a 9×13 inch baking dish. Cut croissants into 2-inch pieces. Bring eggs, cream, and milk to room temperature.
Arrange half the croissant pieces in prepared dish. Sprinkle with half the chocolate chips. Add remaining croissants and chocolate.
Whisk eggs until smooth. Add cream, milk, sugar, vanilla, salt, and cinnamon. Whisk until sugar dissolves. Strain through fine-mesh strainer.
Pour custard evenly over croissant mixture. Press gently to help absorption. Cover and refrigerate overnight, or rest 30 minutes minimum.
Preheat oven to 350°F. Bake uncovered 45-55 minutes until center is set and top is golden brown. Internal temperature should reach 160°F.
Let rest 10 minutes before serving. Dust with powdered sugar and serve warm with fresh berries or maple syrup.
