- 1 cup whole wheat flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup grated zucchini (squeezed dry)
- 1/2 cup plain Greek yogurt
- 1/4 cup olive oil or melted coconut oil
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips
- 1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- 2. In a large bowl, whisk together bran, flour, cocoa, baking powder, baking soda, and salt.
- 3. In another bowl, whisk brown sugar, eggs, yogurt, oil, milk, and vanilla until smooth.
- 4. Fold in the grated zucchini, then add wet ingredients to dry and mix until just combined.
- 5. Stir in chocolate chips.
- 6. Divide batter evenly among muffin cups and bake for 18–20 minutes until a toothpick comes out clean.
- 7. Cool on a rack before serving.
