Chocolate-Zucchini Bran Muffins

  • 1 1/4 cups wheat bran
  • 1 cup whole wheat flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup grated zucchini (squeezed dry)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup olive oil or melted coconut oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  • 1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  • 2. In a large bowl, whisk together bran, flour, cocoa, baking powder, baking soda, and salt.
  • 3. In another bowl, whisk brown sugar, eggs, yogurt, oil, milk, and vanilla until smooth.
  • 4. Fold in the grated zucchini, then add wet ingredients to dry and mix until just combined.
  • 5. Stir in chocolate chips.
  • 6. Divide batter evenly among muffin cups and bake for 18–20 minutes until a toothpick comes out clean.
  • 7. Cool on a rack before serving.

Notes

  • You can replace Greek yogurt with mashed banana for a dairy-free option.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
