1/2 cup pomegranate arils
1/2 cup dried cranberries
1/2 cup pecans or walnuts, toasted
1 honeycrisp apple, thinly sliced
1/4 cup feta or goat cheese, crumbled
Honey Mustard Dressing:
3 tbsp olive oil
1 1/2 tbsp honey
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Add mixed greens to a large serving bowl.
2. Top with pomegranate arils, dried cranberries, pecans, apple slices, and crumbled cheese.
3. In a small jar or bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
4. Drizzle dressing over salad just before serving and toss gently.
