2 tbsp olive oil
Salt and black pepper to taste
2 tbsp Dijon mustard
2 tbsp honey
1 tbsp whole-grain mustard (optional)
2 garlic cloves, minced
1 tbsp lemon juice
1 tsp lemon zest
2 sprigs fresh rosemary or thyme
Lemon slices, for garnish
Fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Place salmon on the prepared sheet and pat dry.
3. Season salmon with salt and black pepper.
4. In a small bowl, whisk Dijon mustard, honey, whole-grain mustard, garlic, lemon juice, and lemon zest.
5. Brush the glaze generously over the salmon.
6. Drizzle olive oil around the salmon and add rosemary or thyme on top.
7. Bake for 12–15 minutes, or until salmon flakes easily with a fork.
8. Optional: broil for 1–2 minutes for a caramelized top.
9. Garnish with lemon slices and fresh parsley before serving.
