Churro Cookies

Soft and chewy cookies coated in a sweet cinnamon-sugar mixture, providing the delightful flavors of churros without the frying.

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Mix the flour, baking powder, ground cinnamon, and salt in a separate bowl.
  5. Combine the dry and wet mixtures gradually until a thick cookie dough forms.
  6. Prepare the cinnamon-sugar coating by mixing 1/4 cup sugar and 1 tablespoon ground cinnamon in a small bowl.
  7. Form the cookies by rolling spoonfuls of dough into balls, then coat them in the cinnamon-sugar mixture.
  8. Bake the cookies for 10-12 minutes, until lightly golden but still soft in the center.
  9. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Enjoy warm with dipping sauce or coffee. Store in an airtight container for 3-5 days.
