Cider-Glazed Sausage and Sweet Potato Skewers

Smoky sausage and tender roasted sweet potatoes glazed with a tangy apple cider sauce the perfect fall-inspired skewers for a cozy dinner or appetizer.

  • 2 medium sweet potatoes, peeled and cubed
  • 12 oz smoked sausage, cut into 1-inch pieces
  • 1 cup apple cider
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh thyme, for garnish
  • Wooden skewers, soaked in water for 20 minutes

Instructions

  • 1. Preheat oven to 400°F (200°C) or preheat grill to medium heat.
  • 2. Bring a pot of salted water to a boil and parboil sweet potato cubes for 5 minutes; drain and cool slightly.
  • 3. In a small saucepan, combine apple cider, maple syrup, Dijon mustard, and vinegar.
  • 4. Simmer until slightly reduced and thickened, about 10 minutes; whisk in olive oil and paprika.
  • 5. Thread sweet potato and sausage pieces alternately onto skewers.
  • 6. Brush generously with cider glaze and season with salt and pepper.
  • 7. Bake or grill for 15–20 minutes, turning halfway through and basting with more glaze.
  • 8. Remove from heat, drizzle with remaining glaze, and garnish with fresh thyme.

Notes

  • Use chicken apple sausage for a lighter option.
  • Add chunks of apple or red onion to the skewers for extra flavor.
  • Serve with extra cider glaze on the side for dipping.
