  • 1 cup rolled oats
  • 1 large apple, finely diced
  • 1 egg
  • 2 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp baking powder

Instructions

  • 1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  • 2. In a blender or food processor, blend cottage cheese, egg, honey, vanilla, and oats until smooth.
  • 3. Stir in baking powder, cinnamon, salt, and diced apple.
  • 4. Spoon batter into muffin cups, filling about 3/4 full.
