  • 1/3 cup unsalted butter, melted
  • 1/2 cup honey
  • 2 large eggs
  • 1 cup buttermilk

Instructions

  • 1. Preheat oven to 375°F (190°C). Grease a 9-inch square baking pan.
  • 2. In a bowl, whisk cornmeal, flour, baking powder, baking soda, salt, and cinnamon.
  • 3. In another bowl, beat mashed sweet potato, sugar, butter, honey, eggs, and buttermilk until well blended.
  • 4. Add dry ingredients to wet and stir until just combined.
  • 5. Pour batter into prepared pan.
  • 6. Bake for 35-40 minutes or until a toothpick comes out clean.
  • 7. Cool before serving.
