- 1 cup cooked sweet potato, mashed
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup sugar
- 1/3 cup unsalted butter, melted
- 1/2 cup honey
- 2 large eggs
- 1 cup buttermilk

- 3. In another bowl, beat mashed sweet potato, sugar, butter, honey, eggs, and buttermilk until well blended.
