Cinnamon Roll Apple Cobbler

Warm, gooey cinnamon rolls baked with tender spiced apples for a comforting cobbler that tastes like fall in every bite easy, sweet, and perfect for sharing.

  • 2 cans refrigerated cinnamon rolls (8 count each)
  • 4 medium apples, peeled and sliced
  • 1/4 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • 1 tbsp cornstarch
  • Juice of 1/2 lemon
  • Pinch of salt
  • Optional: caramel sauce for drizzling

Instructions

  • 1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  • 2. Cut each cinnamon roll into quarters and set aside the icing cups for later.
  • 3. In a large bowl, toss apple slices with brown sugar, granulated sugar, cinnamon, nutmeg, cornstarch, vanilla, lemon juice, and melted butter until evenly coated.
  • 4. Spread the apple mixture evenly in the prepared baking dish.
  • 5. Top with the cinnamon roll pieces, pressing them lightly into the apples.
  • 6. Bake for 35–40 minutes, or until the rolls are golden and the apple filling is bubbling.
  • 7. Cool for 5–10 minutes, then drizzle with the reserved icing and optional caramel sauce before serving.

Notes

  • Use Granny Smith or Honeycrisp apples for the best sweet-tart flavor.
  • For extra indulgence, serve warm with vanilla ice cream.
  • You can make it ahead just reheat in the oven before serving.
