  • 1 cup granulated sugar,
  • 4 large eggs, room temperature,
  • 1 cup sour cream,
  • 2 teaspoons pure vanilla extract,
  • 1/4 cup all-purpose flour,
  • 1/3 cup packed brown sugar,
  • 2 tablespoons ground cinnamon,
  • 3 tablespoons melted butter,
  • 1 tablespoon flour,
  • 1 1/2 cups graham cracker crumbs,
  • 1/3 cup melted butter,
  • 1/4 cup granulated sugar,
  • Pinch of salt

Instructions

  • Preheat oven to 325°F. Wrap springform pan with foil. Bring all ingredients to room temperature. Prepare water bath.
  • Combine graham cracker crumbs, melted butter, sugar, and salt. Press into springform pan. Bake 10 minutes.
  • Mix brown sugar, cinnamon, melted butter, and flour until smooth. Set aside.
  • Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in sour cream, vanilla, and flour.
  • Pour half filling over crust, dollop half cinnamon mixture, repeat layers. Create swirls with knife.
  • Place in water bath. Bake 55-65 minutes until center is almost set. Cool in oven with door cracked for 1 hour.
  • Refrigerate at least 4 hours or overnight before serving for best texture and flavor.
