Cinnamon Roll Pancakes

Fluffy pancakes infused with the flavors of cinnamon rolls and topped with a creamy glaze, perfect for brunch or a cozy breakfast.

  • 1 cup Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Melted Butter
  • 1/4 cup Brown Sugar
  • 1 tablespoon Ground Cinnamon
  • 4 ounces Cream Cheese
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Melted Butter

Instructions

  1. In a large bowl, combine flour, baking powder, and salt. Whisk until blended.
  2. In another bowl, mix milk, egg, and vegetable oil (or melted butter).
  3. Pour wet ingredients into dry ingredients and stir until just combined.
  4. In a small bowl, mix brown sugar and ground cinnamon.
  5. Heat a skillet over medium heat and grease with melted butter. Pour 1/4 cup of batter into the skillet and sprinkle with cinnamon mixture.
  6. Cook until bubbles form, flip, and cook until golden brown.
  7. In a bowl, combine cream cheese, powdered sugar, vanilla extract, and melted butter. Mix until smooth.
  8. Stack pancakes high and drizzle with cream cheese glaze.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze with parchment paper between layers.
