Cinnamon Sugar French Toast Muffins

A delightful twist on classic French toast, these muffins are easy to make, fun to eat, and perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup sugar mixed with 1 teaspoon cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin with liners or grease it.
  3. Mix the all-purpose flour, baking powder, salt, and ground cinnamon in a large bowl.
  4. Combine the eggs, milk, sugar, melted butter, and vanilla extract in another bowl.
  5. Combine the wet and dry mixtures gently, being careful not to over-mix.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Prepare the cinnamon sugar topping in a small bowl.
  8. Sprinkle the cinnamon sugar mixture over the muffins.
  9. Bake for 18-20 minutes, until a toothpick comes out clean.
  10. Cool the muffins in the tin for a few minutes before transferring to a wire rack.

Notes

Serve warm with butter, syrup, fresh fruit, whipped cream, or yogurt.
