  • 1 cup sour cream (full fat)
  • ⅓ cup dry white wine (optional)
  • 1 tsp smoked paprika
  • Salt & black pepper
  • Fresh parsley (chopped)

Instructions

  • 1. Pat beef dry. Season generously salt/pepper. Heat 1 tbsp oil + 1 tbsp butter in large skillet over high heat.
  • 2. Sear beef in 2 batches 1-2 mins until browned. Remove to plate.
  • 3. Reduce heat medium. Melt 1 tbsp butter. Sauté onions 5 mins until golden. Add mushrooms, cook 7 mins until browned and moisture evaporates.
  • 4. Add garlic, flour, paprika 1 min until fragrant. Deglaze with white wine, scraping browned bits.
  • 5. Gradually whisk in beef broth, Worcestershire, Dijon. Simmer 5 mins until thickened.
  • 6. Reduce heat low. Stir in sour cream until smooth. Return beef + juices. Warm 2 mins (don’t boil).
  • 7. Season taste. Serve over buttered egg noodles. Garnish parsley.

  • Slice beef paper-thin against grain for tenderness.
  • Sear hot/fast – overcrowding = steaming.
  • Full-fat sour cream = authentic velvety sauce.
