  • 1/4 tsp ground ginger
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil (or melted butter)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk

Instructions

  • 1. Preheat oven to 350°F (175°C). Grease and line a Dutch oven with parchment paper.
  • 2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  • 3. In a large bowl, whisk pumpkin puree, oil, sugars, eggs, and vanilla until smooth.
  • 4. Gradually add dry ingredients to wet mixture, alternating with milk, and stir until just combined.
  • 5. Pour batter into prepared Dutch oven.
  • 6. Bake uncovered for 55–65 minutes, until a toothpick inserted in center comes out clean.
  • 7. Cool 15 minutes before slicing and serving.

Notes

  • For extra flavor, add 1/2 cup chopped nuts or chocolate chips to the batter.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread freezes well for up to 2 months wrap tightly in plastic wrap.
