1 lb ground chuck (80/20),
2 large yellow onions, sliced,
8 slices marble rye bread,
8 slices Swiss cheese,
4 slices American cheese,
4 tablespoons butter, softened,
2 tablespoons vegetable oil,
2 teaspoons kosher salt,
1 teaspoon black pepper,
1 teaspoon garlic powder,
1/2 teaspoon onion powder,
1/4 teaspoon smoked paprika
Instructions
Form ground beef into 4 patties slightly larger than bread slices. Season with salt, pepper, garlic powder, onion powder, and paprika. Butter one side of each bread slice.
Heat 1 tablespoon oil in cast iron skillet over medium heat. Cook sliced onions for 15-20 minutes, stirring occasionally, until golden brown and caramelized. Remove and set aside.
Increase heat to medium-high. Add remaining oil and cook patties 3-4 minutes per side until internal temperature reaches 160°F. Don’t press down while cooking.
Layer: buttered bread (butter-side down), Swiss cheese, beef patty, caramelized onions, American cheese, top bread (butter-side up).
Cook assembled sandwiches over medium heat for 2-3 minutes per side until golden brown and cheese melts completely. Serve immediately.
