  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 teaspoon dried thyme
  • 1/2 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until translucent.
  • 2. Add mushrooms, carrots, and celery. Cook for 5-7 minutes.
  • 3. Pour in chicken broth, add thyme and rosemary. Bring to a boil.
  • 4. Reduce heat and simmer for 20 minutes until vegetables are tender.
  • 5. Add shredded chicken and cook until heated through.
  • 6. Season with salt and pepper. Garnish with fresh parsley and serve.
