Coconut Lime Chicken

A delightful dish combining coconut milk with lime, perfect for weeknight dinners or special occasions.

  • 4 chicken breasts
  • 1 cup coconut milk
  • 1 lime (juiced and zested)
  • 1/2 cup fresh cilantro (chopped)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Sear the chicken in a skillet with olive oil over medium heat, about 4-5 minutes per side.
  4. Mix the coconut milk, lime juice, lime zest, and chopped cilantro in a bowl.
  5. Combine the chicken and the coconut mixture in the skillet.
  6. Bake for about 20 minutes, until the internal temperature reaches 165°F (75°C).
  7. Serve the chicken hot, garnished with cilantro and lime wedges.

Notes
