Coconut Lover’s Rice Krispy Treats Recipe

A sweet and crunchy treat packed with crispy rice cereal, melted marshmallows, and plenty of coconut for a tropical twist on a classic dessert. Perfect for snacks or parties.

  • 6 cups rice krispies cereal
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut, plus extra for topping

Instructions

  • 1. Grease a 9×13-inch pan with butter.
  • 2. In a large saucepan, melt butter over low heat.
  • 3. Add marshmallows and stir until fully melted and smooth.
  • 4. Remove from heat and stir in vanilla extract and shredded coconut.
  • 5. Fold in rice krispies cereal until evenly coated.
  • 6. Press mixture evenly into prepared pan.
  • 7. Sprinkle extra coconut on top and gently press down.
  • 8. Allow to cool completely before cutting into squares.

Notes

  • Use lightly toasted coconut for extra flavor.
  • Store in an airtight container at room temperature for up to 5 days.
  • For a chocolate version, drizzle melted chocolate on top before the coconut topping.
