- 6 cups rice krispies cereal
- 4 cups mini marshmallows
- 3 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 cup sweetened shredded coconut, plus extra for topping
- 1. Grease a 9×13-inch pan with butter.
- 2. In a large saucepan, melt butter over low heat.
- 3. Add marshmallows and stir until fully melted and smooth.
- 4. Remove from heat and stir in vanilla extract and shredded coconut.
- 5. Fold in rice krispies cereal until evenly coated.
- 6. Press mixture evenly into prepared pan.
- 7. Sprinkle extra coconut on top and gently press down.
- 8. Allow to cool completely before cutting into squares.
Notes
- Use lightly toasted coconut for extra flavor.
- Store in an airtight container at room temperature for up to 5 days.
- For a chocolate version, drizzle melted chocolate on top before the coconut topping.
