Colorful Caprese Pasta Salad

A vibrant and easy-to-make pasta salad combining rotini, cherry tomatoes, mozzarella, and basil, perfect for lunch or gatherings.

  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1 cup fresh basil leaves

Instructions

  1. Cook the pasta: Start by boiling water in a large pot. Add a pinch of salt and the rotini pasta. Cook until al dente, about 8 to 10 minutes.
  2. Drain and cool: Drain the pasta in a colander and rinse with cold water. Let it cool completely.
  3. Combine salad ingredients: In a large bowl, mix the cooled pasta, tomatoes, mozzarella, and basil.
  4. Make the dressing: Whisk together olive oil, balsamic vinegar, and salt and pepper in a small bowl.
  5. Dress the salad: Pour the dressing over the salad and gently toss to coat.
  6. Serve or chill: Serve immediately or refrigerate for at least 30 minutes for enhanced flavor.
