These Copycat McGriddle Bites pack all the sweet and savory flavors of the classic breakfast sandwich into mini, portable bites perfect for meal prep or a quick grab-and-go breakfast.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp brown sugar
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 tbsp maple syrup (plus more for dipping)
  • 2 tbsp unsalted butter, melted
  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/4 cup shredded cheddar cheese
  • Cooking spray or oil, for greasing

Instructions

  • 1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  • 2. In a bowl, whisk together flour, baking powder, baking soda, salt, and brown sugar.
  • 3. In another bowl, whisk egg, buttermilk, maple syrup, and melted butter.
  • 4. Combine wet and dry ingredients until just mixed—don’t overmix.
  • 5. Fold in sausage crumbles and shredded cheese.
  • 6. Divide batter evenly into mini muffin cups, filling about 3/4 full.
  • 7. Bake for 12–15 minutes, until golden and a toothpick comes out clean.
  • 8. Cool slightly and serve warm with maple syrup for dipping.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Reheat in the microwave or air fryer.
