Copycat Santa Fe Salad

A delicious and refreshing salad inspired by a popular restaurant, featuring grilled chicken, fresh veggies, and creamy ranch dressing.

  • 1 grilled chicken breast
  • 4 cups romaine lettuce
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla strips
  • ½ cup ranch dressing
  • 2 tablespoons lime juice

Instructions

  1. Grill the chicken breast: Preheat the grill to medium-high. Season the chicken with salt and pepper. Grill for about 7-8 minutes per side until cooked through. Let it rest and slice into strips.
  2. Prepare the salad base: In a large bowl, chop romaine lettuce into bite-sized pieces. Add rinsed black beans and drained corn. Halve cherry tomatoes and add them as well.
  3. Add the avocado: Cut and dice the avocado, then gently mix into the salad.
  4. Top with grilled chicken and cheese: Place grilled chicken strips on top and sprinkle with shredded cheddar cheese.
  5. Finish with tortilla strips and dressing: Add tortilla strips for crunch and drizzle ranch dressing on top. Squeeze fresh lime juice over everything.
  6. Toss and serve: Gently mix the salad and serve immediately.
