  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 package cream cheese (8 oz, softened)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • Chocolate chips (for topping)
  • Rainbow sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan.
  2. Make the brownie batter by mixing the brownie mix, vegetable oil, and large egg until fully combined, then pour it into the pan.
  3. Bake the brownie layer for about 20-25 minutes until slightly gooey in the center.
  4. Prepare the cheesecake filling by beating the softened cream cheese until smooth.
  5. Add the sugar and vanilla to the cream cheese, mixing well. Then add eggs one at a time, followed by sour cream and flour until smooth.
  6. Combine the cream cheese mixture over the cooled brownie layer in the springform pan.
  7. Bake the cheesecake for an additional 40-45 minutes until set with a gentle jiggle.
  8. Cool the cheesecake to room temperature, then chill in the refrigerator for at least 4 hours or overnight.
  9. Add chocolate chips and rainbow sprinkles on top before serving.
