  • 1 small onion, chopped
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  • 1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  • 2. Heat olive oil in a skillet, sauté onion until translucent.
  • 3. Add chopped spinach and cook until wilted. Remove from heat.
  • 4. In a bowl, whisk eggs, cottage cheese, mozzarella, Parmesan, salt, pepper, and nutmeg.
  • 5. Add cooked spinach and onion mixture; stir to combine.
  • 6. Pour mixture into prepared pie dish.
  • 7. Bake 35-40 minutes until set and golden on top.
  • 8. Let cool for 5 minutes before serving.
