Cottage Cheese Chicken Parmesan Bowl

A delicious and hearty meal combining the flavors of chicken parmesan with creamy cottage cheese for a healthier comfort food twist.

  • 2 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. In a large skillet, add olive oil and heat over medium heat. Cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  4. Once cooked, remove the chicken from the skillet and slice it into strips.
  5. In a bowl, mix the cottage cheese and half of the mozzarella cheese together.
  6. In an oven-safe bowl or dish, layer the cottage cheese mixture, sliced chicken, and marinara sauce. Top with the remaining mozzarella and Parmesan cheese.
  7. Bake in the oven for about 20-25 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool slightly. Garnish with fresh basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. To reheat, use the microwave or oven.
