Cowboy Butter Chicken Linguine

An easy and delicious dish featuring tender chicken, flavorful linguine, and a rich butter sauce, perfect for busy weeknights.

  • 2 chicken breasts, diced
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 lemon, juiced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Start by cooking the linguine according to the package instructions. Usually, this means boiling water and adding salt before the pasta. Stir occasionally to prevent sticking. Once it’s al dente, drain it and set aside.
  2. Sauté the Garlic: In a large skillet, melt the butter over medium heat. Once it’s melted and hot, add the minced garlic. Sauté for about 1-2 minutes until it’s fragrant but be careful not to burn it.
  3. Cook the Chicken: Season the diced chicken breast with salt, pepper, and paprika. Add the seasoned chicken to the skillet with the garlic. Cook the chicken for about 6-8 minutes, stirring occasionally, until it’s browned and cooked through. The internal temperature should reach 165°F (75°C) for safety.
  4. Make the Butter Sauce: Once the chicken is fully cooked, stir in the Dijon mustard and lemon juice. Mix everything well so that the chicken is fully coated in the creamy sauce.
  5. Combine with Pasta: Add the cooked linguine to the skillet. Toss everything together until the pasta is nicely coated with the butter sauce and mixed evenly with the chicken.
  6. Garnish and Serve: Remove the skillet from the heat. Before serving, garnish with chopped fresh parsley for a pop of color and flavor.
