Cowboy Soup

Hearty Cowboy Soup loaded with ground beef, beans, corn, potatoes, and smoky spices in a flavorful tomato broth. Perfect one-pot comfort food for cold days and family dinners.

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) corn, drained
  • 2 large potatoes, peeled and diced
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • 1. In a large pot over medium heat, brown ground beef with onion, bell pepper, and garlic. Drain excess fat.
  • 2. Stir in chili powder, cumin, paprika, salt, and pepper; cook 1 minute.
  • 3. Add beef broth, diced tomatoes, pinto beans, corn, potatoes, and tomato paste.
  • 4. Bring to a boil, then reduce heat and simmer 25-30 minutes until potatoes are tender.
  • 5. Adjust seasoning to taste. Garnish with fresh cilantro and serve hot.

Notes

  • Use fire-roasted tomatoes for extra smokiness.
  • Add jalapeños for heat or bacon for richness.
