- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 8 oz mushrooms, sliced
- 1 sweet potato, diced
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried sage
- 1 bay leaf
- 1 cup coconut milk (or heavy cream)
- 2 tbsp flour (optional, for thickening)
- Salt and pepper to taste
- Fresh parsley for garnish
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add onion, garlic, carrots, and celery; sauté until softened.
- 3. Stir in mushrooms and sweet potato, cooking for 3–4 minutes.
- 4. Add wild rice, vegetable broth, thyme, sage, and bay leaf.
- 5. Bring to a boil, then reduce heat and simmer for 45–50 minutes until rice is tender.
- 6. Remove bay leaf, stir in coconut milk (or cream).
- 7. Optional: whisk flour with a little broth and stir in to thicken.
- 8. Season with salt and pepper.
- 9. Garnish with fresh parsley and serve warm.
