Cozy Autumn Wild Rice Soup: The Ultimate Comfort Bowl for Fall

Ingredients

  • 1 cup wild rice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 8 oz mushrooms, sliced
  • 1 sweet potato, diced
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 bay leaf
  • 1 cup coconut milk (or heavy cream)
  • 2 tbsp flour (optional, for thickening)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion, garlic, carrots, and celery; sauté until softened.
  • 3. Stir in mushrooms and sweet potato, cooking for 3–4 minutes.
  • 4. Add wild rice, vegetable broth, thyme, sage, and bay leaf.
  • 5. Bring to a boil, then reduce heat and simmer for 45–50 minutes until rice is tender.
  • 6. Remove bay leaf, stir in coconut milk (or cream).
  • 7. Optional: whisk flour with a little broth and stir in to thicken.
  • 8. Season with salt and pepper.
  • 9. Garnish with fresh parsley and serve warm.

  • For extra richness, use heavy cream instead of coconut milk.
