  • 1 cup rolled oats
  • 1 1/2 cups boiling water
  • 1/4 cup honey
  • 2 tbsp unsalted butter
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/2 cup warm milk (110°F)
  • 3 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 egg, lightly beaten
  • Extra oats for topping

Instructions

  • 1. In a bowl, combine oats, boiling water, honey, and butter. Stir and let cool to lukewarm.
  • 2. In a small bowl, dissolve yeast in warm milk and let sit until foamy, about 5 minutes.
  • 3. Add yeast mixture, egg, flour, cinnamon, and salt to the oat mixture. Mix until a dough forms.
  • 4. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  • 5. Place dough in a greased bowl, cover, and let rise until doubled, about 1 hour.
  • 6. Punch dough down and shape into a loaf. Place in a greased 9×5-inch loaf pan.
  • 7. Cover and let rise again for 30–40 minutes until puffy.
  • 8. Preheat oven to 350°F (175°C). Brush loaf with milk or egg wash and sprinkle oats on top.
  • 9. Bake 35–40 minutes until golden brown and sounds hollow when tapped.
  • 10. Cool completely on a wire rack before slicing.

  • For extra flavor, drizzle warm bread with honey before serving.
