- 1 lb boneless chicken breasts, cooked and shredded
- 6 slices bacon, cooked and crumbled
- 8 oz egg noodles
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups half & half
- 8 oz cream cheese, softened
- 1 packet (1 oz) ranch seasoning mix
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- Green onions for garnish
- 1. Heat olive oil in large pot over medium heat. Sauté onion and garlic until softened.
- 2. Add chicken broth and ranch seasoning. Bring to a boil.
- 3. Add egg noodles and cook according to package directions until tender.
- 4. Reduce heat to low. Stir in cream cheese until melted and smooth.
- 5. Add half & half, shredded chicken, 1 cup cheddar cheese, and half the bacon. Stir until cheese melts.
- 6. Season with salt and pepper. Simmer 5 minutes until thickened.
- 7. Serve garnished with remaining cheese, bacon, and green onions.
