Crack Chicken Noodle Soup

Irresistibly creamy Crack Chicken Noodle Soup loaded with ranch-seasoned chicken, bacon, cheddar cheese, and egg noodles in a rich chicken broth. The ultimate comfort food mashup.

Ingredients

  • 1 lb boneless chicken breasts, cooked and shredded
  • 6 slices bacon, cooked and crumbled
  • 8 oz egg noodles
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups half & half
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  • 1. Heat olive oil in large pot over medium heat. Sauté onion and garlic until softened.
  • 2. Add chicken broth and ranch seasoning. Bring to a boil.
  • 3. Add egg noodles and cook according to package directions until tender.
  • 4. Reduce heat to low. Stir in cream cheese until melted and smooth.
  • 5. Add half & half, shredded chicken, 1 cup cheddar cheese, and half the bacon. Stir until cheese melts.
  • 6. Season with salt and pepper. Simmer 5 minutes until thickened.
  • 7. Serve garnished with remaining cheese, bacon, and green onions.
