1 wheel brie cheese (8 oz, room temperature),
1 sheet frozen puff pastry, thawed,
1/2 cup dried cranberries,
1/2 cup chopped pecans, toasted,
2 tablespoons honey,
1 teaspoon fresh thyme leaves,
1 egg, beaten,
2 tablespoons brown sugar,
1/4 teaspoon ground cinnamon,
Pinch of salt
Instructions
Preheat oven to 400°F. Line baking sheet with parchment paper.
Toast pecans in dry skillet for 3-4 minutes until fragrant. Mix with cranberries, honey, thyme, brown sugar, cinnamon, and salt.
Roll puff pastry into 12-inch square. Place brie in center and top with cranberry-pecan mixture.
Gather pastry corners over brie, pleating and pinching seams to seal completely.
Place seam-side down on baking sheet. Brush with egg wash.
Bake 20-25 minutes until golden brown. Cool 10 minutes before serving.
