  • 1 wheel brie cheese (8 oz, room temperature),
  • 1 sheet frozen puff pastry, thawed,
  • 1/2 cup dried cranberries,
  • 1/2 cup chopped pecans, toasted,
  • 2 tablespoons honey,
  • 1 teaspoon fresh thyme leaves,
  • 1 egg, beaten,
  • 2 tablespoons brown sugar,
  • 1/4 teaspoon ground cinnamon,
  • Pinch of salt

Instructions

  • Preheat oven to 400°F. Line baking sheet with parchment paper.
  • Toast pecans in dry skillet for 3-4 minutes until fragrant. Mix with cranberries, honey, thyme, brown sugar, cinnamon, and salt.
  • Roll puff pastry into 12-inch square. Place brie in center and top with cranberry-pecan mixture.
  • Gather pastry corners over brie, pleating and pinching seams to seal completely.
  • Place seam-side down on baking sheet. Brush with egg wash.
  • Bake 20-25 minutes until golden brown. Cool 10 minutes before serving.
