Cranberry Turkey Stuffing Balls: Perfect Holiday Leftover Recipe

  • 3 cups cooked turkey, finely diced,
  • 2 cups leftover stuffing,
  • 1/2 cup dried cranberries, chopped,
  • 2 large eggs, beaten,
  • 1/4 cup chicken broth,
  • 1/4 cup plain breadcrumbs,
  • 2 tablespoons fresh parsley, chopped,
  • 1 teaspoon dried sage,
  • 1/2 teaspoon garlic powder,
  • 1/2 teaspoon onion powder,
  • 1/4 teaspoon black pepper,
  • 2 tablespoons olive oil for coating

Instructions

  • Preheat oven to 400°F. Line baking sheet with parchment paper.
  • Combine diced turkey, stuffing, cranberries, beaten eggs, and chicken broth in large bowl. Mix gently but thoroughly.
  • Add breadcrumbs, parsley, sage, garlic powder, onion powder, and pepper. Mix until mixture holds together when squeezed.
  • Form mixture into 1.5-inch balls using ice cream scoop or hands. Place on prepared baking sheet with space between each.
  • Brush balls lightly with olive oil for golden browning.
  • Bake 20-25 minutes until golden brown and internal temperature reaches 165°F.
