- 1 1/2 cups graham cracker crumbs (or digestive biscuits)
- 5 tbsp melted butter
- 2 tbsp sugar
- White Chocolate Filling:
- 8 oz white chocolate, chopped
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- Cranberry Topping:
- 1 1/2 cups fresh or frozen cranberries
- 1/3 cup sugar
- 1/4 cup orange juice
- 1 tsp orange zest
- Pinch of salt
- 1. Preheat oven to 350°F (175°C).
- 2. Mix graham crumbs, melted butter, and sugar, then press firmly into a tart pan.
- 3. Bake crust 8–10 minutes and let cool completely.
- 4. Heat heavy cream just until steaming, then pour over chopped white chocolate; stir until melted and smooth.
- 5. Beat cream cheese, powdered sugar, and vanilla until smooth, then mix in white chocolate mixture until creamy.
- 6. Spread filling evenly in cooled tart crust and refrigerate 2–3 hours.
- 7. In a saucepan, simmer cranberries, sugar, orange juice, zest, and salt 8–10 minutes until thickened.
- 8. Cool completely, then spoon over chilled tart.
- 9. Slice and serve.
Notes
- Use shortbread cookies for the crust for extra richness.
- Top with sugared cranberries for decoration.
- Keeps refrigerated 3–4 days.
