Cream Cheese-Filled Banana Bread

  • 3 ripe bananas
  • 1/2 cup cream cheese
  • 1/4 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Combine cream cheese and butter in the same bowl; beat until creamy.
  4. Add sugar, eggs, and vanilla; mix well to combine.
  5. Combine baking soda, salt, and flour in a separate bowl.
  6. Mix the dry ingredients into the banana mixture until just combined.
  7. Layer half of the batter into a prepared loaf pan, then add cream cheese, and cover with remaining batter.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra indulgence, you can spread butter on slices or drizzle a glaze made of powdered sugar and milk over the top once cool.
