- Soup base:
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 lb ground chicken or Italian sausage
- 4 cups chicken broth
- 2 cups heavy cream
- 1½ cups marinara sauce
- 8 lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- ½ tsp salt, more to taste
- ¼ tsp black pepper
- Pinch red pepper flakes (optional)
- Cheese:
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- To finish:
- Fresh basil or parsley, chopped
- Extra Parmesan
- Red pepper flakes (optional)
- 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground chicken or Italian sausage and cook, breaking it into small pieces, until browned and cooked through. Drain off excess fat if needed.
- 2. Add the diced onion and cook 3–4 minutes until softened, then stir in the minced garlic and cook 30 seconds until fragrant.
- 3. Pour in the chicken broth, heavy cream, and marinara sauce. Stir in Italian seasoning, salt, black pepper, and red pepper flakes if using. Bring to a gentle boil.
- 4. Add the broken lasagna noodles, making sure they are submerged. Reduce heat to a simmer and cook 10–12 minutes, stirring occasionally, until the noodles are tender but not mushy.
- 5. Reduce the heat to low. Stir in the grated Parmesan a handful at a time until melted and the broth turns creamy. Add the shredded mozzarella and stir until smooth and cheesy.
- 6. Taste and adjust seasoning with more salt, pepper, or red pepper flakes. If the soup is too thick, splash in a bit more broth or cream until you reach your desired consistency.
- 7. Ladle into bowls and top with fresh basil or parsley and extra Parmesan. Serve hot.
Notes
- Break the lasagna noodles into similar-sized pieces so they cook evenly.
- Simmer gently after adding cream to prevent curdling and keep the broth silky.
- Add the cheese off the direct boil so it melts smoothly into the soup instead of clumping.
- If the soup thickens as it sits, loosen leftovers with a splash of broth or milk while reheating.
- Swap in spinach or mushrooms for part of the meat for extra veggies and texture.
