- 1 lb boneless skinless chicken breast, diced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 6 cups chicken broth
- 1 1/2 cups short pasta (ditalini, macaroni, or small shells)
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup heavy cream (or half-and-half)
- 2 cups fresh spinach
- 1/2 cup grated Parmesan
- Fresh parsley for garnish
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add diced chicken and cook until lightly browned.
- 3. Stir in onion, garlic, and carrots; sauté 3–4 minutes until fragrant.
- 4. Add chicken broth, pasta, Italian seasoning, paprika, salt, and pepper.
- 5. Bring to a boil, then simmer 10–12 minutes, until pasta is tender.
- 6. Reduce heat and stir in heavy cream and Parmesan.
- 7. Add spinach and cook 1–2 minutes until wilted.
- 8. Taste and adjust seasoning, then serve hot with fresh parsley.
