Creamy Chicken Pasta Soup Recipe with Carrot and Spinach

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, diced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 6 cups chicken broth
  • 1 1/2 cups short pasta (ditalini, macaroni, or small shells)
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream (or half-and-half)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add diced chicken and cook until lightly browned.
  • 3. Stir in onion, garlic, and carrots; sauté 3–4 minutes until fragrant.
  • 4. Add chicken broth, pasta, Italian seasoning, paprika, salt, and pepper.
  • 5. Bring to a boil, then simmer 10–12 minutes, until pasta is tender.
  • 6. Reduce heat and stir in heavy cream and Parmesan.
  • 7. Add spinach and cook 1–2 minutes until wilted.
  • 8. Taste and adjust seasoning, then serve hot with fresh parsley.

Notes

  • Use rotisserie chicken for a faster version.
  • Substitute kale for spinach.
  • Add a splash of lemon juice to brighten flavor.
