  • 2 tablespoons olive oil
  • 4 chicken thighs or breasts
  • 1 can (14 oz) coconut milk
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon soy sauce (optional)
  • Chopped cilantro for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Season the chicken thighs or breasts with salt and pepper.
  3. Place the chicken into the pan and cook for about 5-7 minutes on each side until golden brown.
  4. Remove the chicken from the pan and set it aside.
  5. Sauté the minced garlic and ginger in the same pan for about 1 minute.
  6. Pour in the coconut milk, stirring well to combine with the garlic and ginger.
  7. Add the browned chicken back to the pan and cover to let it simmer for about 15 minutes.
  8. Serve hot with rice or vegetables, garnished with chopped cilantro.

Notes

Use full-fat coconut milk for a creamier texture. Adjust spice levels by adding red pepper flakes if desired.
