Creamy Garlic Chicken Wild Rice Casserole

  • 2 cups cooked wild rice
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 1/4 cup chopped parsley for garnish

Instructions

  • 1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • 2. Cook wild rice according to package instructions and set aside.
  • 3. Heat olive oil in a large skillet and cook chicken until golden brown; remove and set aside.
  • 4. In the same skillet, sauté onion, garlic, and mushrooms until softened.
  • 5. Add butter and flour, stirring for 1 minute to make a roux.
  • 6. Gradually whisk in chicken broth and milk until creamy and thickened.
  • 7. Stir in Parmesan cheese, thyme, rosemary, salt, and pepper.
  • 8. Add cooked rice and chicken, mixing to coat everything evenly in the sauce.
  • 9. Transfer to the baking dish and bake uncovered for 25–30 minutes, until bubbly and golden.
  • 10. Top with chopped parsley before serving.

Notes

  • Make ahead: Assemble casserole a day early and bake before serving.
  • For extra flavor, use shredded rotisserie chicken.
  • Pairs perfectly with a green salad or roasted vegetables.
