- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, diced
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 cup mushrooms, sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup milk or cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 1/4 cup chopped parsley for garnish
- 1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- 2. Cook wild rice according to package instructions and set aside.
- 3. Heat olive oil in a large skillet and cook chicken until golden brown; remove and set aside.
- 4. In the same skillet, sauté onion, garlic, and mushrooms until softened.
- 5. Add butter and flour, stirring for 1 minute to make a roux.
- 6. Gradually whisk in chicken broth and milk until creamy and thickened.
- 7. Stir in Parmesan cheese, thyme, rosemary, salt, and pepper.
- 8. Add cooked rice and chicken, mixing to coat everything evenly in the sauce.
- 9. Transfer to the baking dish and bake uncovered for 25–30 minutes, until bubbly and golden.
- 10. Top with chopped parsley before serving.
