12 oz fettuccine pasta,
1 lb mixed mushrooms, sliced,
6 cloves garlic, minced,
3 tablespoons butter,
2 tablespoons olive oil,
1 cup heavy cream,
½ cup freshly grated Parmesan cheese,
2 tablespoons fresh parsley, chopped,
½ teaspoon black pepper,
Salt to taste,
1 cup reserved pasta water
Instructions
Bring large pot of salted water to boil. Cook pasta 1 minute less than package directions. Reserve 1 cup pasta water before draining.
Heat olive oil in large skillet over medium-high heat. Add mushrooms in single layer, cook 3-4 minutes without stirring until golden. Stir and cook until tender.
Add garlic to mushrooms, cook 30 seconds. Pour in cream, bring to gentle simmer. Add drained pasta and toss.
Add pasta water gradually until sauce coats pasta perfectly. Remove from heat, stir in Parmesan and parsley. Season with salt and pepper.
Serve hot in warmed bowls, garnished with extra Parmesan and fresh herbs if desired.
