Creamy Garlic Mushroom Pasta: Restaurant-Quality Comfort in 20 Minutes

  • 12 oz fettuccine pasta,
  • 1 lb mixed mushrooms, sliced,
  • 6 cloves garlic, minced,
  • 3 tablespoons butter,
  • 2 tablespoons olive oil,
  • 1 cup heavy cream,
  • ½ cup freshly grated Parmesan cheese,
  • 2 tablespoons fresh parsley, chopped,
  • ½ teaspoon black pepper,
  • Salt to taste,
  • 1 cup reserved pasta water

Instructions

  • Bring large pot of salted water to boil. Cook pasta 1 minute less than package directions. Reserve 1 cup pasta water before draining.
  • Heat olive oil in large skillet over medium-high heat. Add mushrooms in single layer, cook 3-4 minutes without stirring until golden. Stir and cook until tender.
  • Add garlic to mushrooms, cook 30 seconds. Pour in cream, bring to gentle simmer. Add drained pasta and toss.
  • Add pasta water gradually until sauce coats pasta perfectly. Remove from heat, stir in Parmesan and parsley. Season with salt and pepper.
  • Serve hot in warmed bowls, garnished with extra Parmesan and fresh herbs if desired.
