Creamy Low Carb Chicken Casserole

A comforting low-carb casserole packed with chicken, vegetables, and creamy cheese, perfect for weeknight dinners or meal prep.

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, broccoli, cauliflower, cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a greased 9×13 inch casserole dish.
  5. Sprinkle paprika on top for extra flavor.
  6. Bake for 25-30 minutes, or until heated through and bubbly.
  7. Let rest for a few minutes before serving.

Notes

Leftovers can be stored for 3-4 days in the refrigerator or frozen for 2-3 months. Reheat in the oven at 350°F until warm.
