  • 4 chicken breasts
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Cook the chicken for about 5-7 minutes on each side, until golden brown and cooked through. Remove from the skillet.
  4. Sauté the sliced mushrooms and minced garlic in the same skillet for about 3-5 minutes until the mushrooms are soft.
  5. Pour in the chicken broth, scraping up any brown bits from the skillet, and let simmer for about 2-3 minutes.
  6. Stir in the heavy cream and allow the sauce to thicken for a few minutes.
  7. Return the cooked chicken to the skillet, coating it with the sauce and heat for an additional 2-3 minutes.
  8. Garnish with fresh parsley before serving.
