Creamy Parmesan Spinach Mushroom Pasta

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions, about 8 to 12 minutes. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sliced mushrooms to the skillet, sautéing for about 4 to 5 minutes until tender.
  4. Stir in the fresh spinach, cooking for another 2 to 3 minutes until wilted.
  5. Make the sauce by pouring in the heavy cream and bringing it to a gentle simmer.
  6. Add the grated Parmesan cheese, stirring until melted and the sauce is creamy.
  7. Combine the cooked pasta with the sauce, tossing to coat, and season with salt and pepper to taste.
  8. Serve hot, garnished with extra Parmesan and black pepper if desired.

Notes

For a richer sauce, increase the amount of heavy cream or cheese. This pasta dish can be made ahead and reheated.
